Idea Recruitment has partnered with the local Zoo, in Jacksonville, FL in their search for full time Lead Line Cooks to enhance the guest experience and enforce the zoo's vision of inspiring discovery of the earth's wildlife through innovative experiences in a caring environment.   Be aware of the safety of our guests and our staff.
 
This position is responsible for the preparation of menu items in the Food Service Division.  Assist the Chef with overall culinary direction and development of the team, while promoting teamwork and a fun work environment.
 
SPECIFIC RESPONSIBILITIES:
 
  • Assure the production of the best quality possible in a proper sanitary and professional manner Maintain the inventory of the workstations
  • Assist in providing breaks for other Associates working the line, as necessary when advised
  • Work with and communicate with the other Line Cooks, Prep Cooks, Kitchen Workers, and Food Server, as required
  • Demonstrates knowledge of HACCP, basic food temperatures, proper food handling and good judgment of quantity, quality, and production
  • Able to follow recipes, make recipe conversions, adhere to food allergies, and propose menu items
  • Basic understanding of kitchen lingo and etiquette
  • Receptive to working on-stage
  • Awareness of modern and classical cooking, as well as knife skills and basic butchering techniques
  • Assist the Chef with overall culinary direction and development of the team, while promoting teamwork and a fun work environment
  • Oversee the daily operation and execution of all menu categories and recipes to ensure the quality and efficiency for every dish
  • Continue to grow in your culinary career by working in a variety of kitchens and locations without ever having to leave the company
  • Demonstrates the ability to lead in a fast paced and sometimes chaotic environment. Assist the other assigned personnel in the preparation of the requested food and to coordinate the orders for pick up by the Food Server
 
EDUCATION AND EXPERIENCE REQUIRED:
 
  • Must successfully complete both the ServSafe Food Handlers Training Program and the ServSafe Alcohol (Responsible Vendor) Training Program prior to the first day. The Training
Programs may be paid by the JZG. (We will not reimburse for a course.)
  • Food Handler Certification minimum (JZG)
  • Proven experience in all stations of the kitchen and multiple cooking skills.
  • One year of leadership experience in the food and beverage line of business. 
  • Knowledge of kitchen equipment, basic tools, small wares, culinary techniques, and ingredients specialized to the location
  • Demonstrates knowledge of HACCP, basic food temperatures, proper food handling and good judgment of quantity, quality, and production
  • Showcases passion for the culinary arts, continual learning, and guest service
  • High school diploma or GED; 3 years’ experience in the culinary, food and beverage, or related professional area
  • OR  culinary certification from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major; 1 years’ experience in the culinary, food and beverage, or related professional area
  • Must have good customer service skills and present a professional image.  
  • Must be able to take direction from the Chef, Restaurant Manager/Supervisor.
 
ADDITIONAL REQUIREMENTS:  
  • Must be available to work special events that may occur outside of regular work schedule, including evenings, weekends or holidays, as assigned. 
  • Ability to work independently and exercise independent judgment.
 
PHYSICAL REQUIREMENTS:
  • Must be able to sweep, mop, stoop, bend, kneel and lift overhead. 
  • Standing for a period of at least 3 hours and lifting up to 50 lbs. without difficulty is required.  
  • Ability to traverse zoo grounds and operate a motorized cart.
