Position Summary:  
This role will involve working closely with operations, marketing, training, finance and IT to ensure seamless compliance and execution of all company beverage programs. The job serves as the organization's in-house consultant and mentor for wine, beer and spirits. In addition, you will direct all activities for beverage development at both national and international locations of our restaurant group and work closely with outside partners to develop programs. The position offers autonomy in development of wine, spirits and beer programs with specific emphasis on training and compliance aspects.

  • Continuous focus on increasing beverage (alcoholic) sales as a percentage of food sales.
  • Oversee, track, develop and communicate detailed statistics from the server to national levels.
  • Coordinate and manage the national core wine list along with developing regional and local programs.
  • Meet with winemakers and purveyors to coordinate the best possible quality and continuity for the core list of wines by the bottle and glass.
  • Develop national programs for spirits that are financially advantageous, but still embody the brand.
  • Approve all micros changes for wine, spirits and beer to ensure accuracy and consistency.
  • Manage compliance of restaurants to all mandates, specifically wine, beer and spirit list size and inventory levels.
  • Develop cocktail recipes and programs.
  • Spearhead startup work for new locations:
  • Training:
  • Coordinate and lead management and staff training for wine, beer and spirits.
  • Improve product knowledge and sales skills.                
  • Continually review wine beer and spirit programs at each location:
  • Standardize wine list formats.                     
  • Standardize additional beverage list formats.                   
  • Collect, review, and utilize periodic beverage and wine competitive surveys for all markets.                     
  • Review content and pricing/mark-ups for consistency, quality, and adherence to the spirit of our program goals.                     
  • Inspect POS pricing for accuracy.                
  • Monitor and supervise management of beverage inventories.
Qualifications and Education Requirements
  • A Bachelor's degree in related field
  • The ideal candidate for this role will bring 10 years of progressive higher-level experience in beverage purchasing and menu development for an established restaurant group.
  • Experience with an upscale or fine dining restaurant brand is highly valued.
This position is located in the New York City area. You must currently live in this area or be willing to relocate to be considered.  Anticipate extensive travel for training and review processes.
